Creamy Salmon and Capers with Tubular Spaghetti
Creamy Salmon Pasta with Garlic & Rocket from Amanda's Easy Eats S2024. Amanda Duggan adds her style to a recipe by Helen Best-Shaw from her website "Fuss Free Flavours". As seen on: Amanda's Easy Eats (Season 2024: Episode 15)
Ingredients
- 1/2 pkt tubular spaghetti
- 1 tbs butter
- ½ small onion diced
- Oil
- 1 fresh red chilli finely chopped – take the seeds out if needed
- 1 clove garlic minced
- Handful capers roughly chopped
- 40g cream cheese
- ½ lemon juiced & zested
- 213gm can salmon
- 1 handful of rocket leaves chopped
- Salt & pepper to taste
Instructions
- Bring large saucepan of salted water to boil
- Add pasta and cook according to instructions
- Heat the oil in a large fry pan over medium heat
- Add butter
- Fry onion until golden
- Season with salt
- Add chilli and cook for couple of minutes until all ingredients are soft and squishy
- Add capers and stir through
- Turn off heat
- Add the cheese, lemon juice and zest
- Add a cup of the pasta water to the cheese mixture and stir
- Cook gently until the cheese is melted into a creamy sauce
- Flake the salmon and add to the sauce, add more pasta water if needed
- Add the pasta to the sauce
- Stir gently turning the heat back on to warm through
- Fold in rocket leaves and serve seasoned with salt and pepper to taste
