Creamy Salmon and Capers with Tubular Spaghetti

Creamy Salmon Pasta with Garlic & Rocket from Amanda's Easy Eats S2024. Amanda Duggan adds her style to a recipe by Helen Best-Shaw from her website "Fuss Free Flavours".

Ingredients

  • 1/2 pkt tubular spaghetti
  • 1 tbs butter
  • ½ small onion diced
  • Oil
  • 1 fresh red chilli finely chopped – take the seeds out if needed
  • 1 clove garlic minced
  • Handful capers roughly chopped
  • 40g cream cheese
  • ½ lemon juiced & zested
  • 213gm can salmon
  • 1 handful of rocket leaves chopped
  • Salt & pepper to taste

Instructions

  1. Bring large saucepan of salted water to boil
  2. Add pasta and cook according to instructions
  3. Heat the oil in a large fry pan over medium heat
  4. Add butter
  5. Fry onion until golden
  6. Season with salt
  7. Add chilli and cook for couple of minutes until all ingredients are soft and squishy
  8. Add capers and stir through
  9. Turn off heat
  10. Add the cheese, lemon juice and zest
  11. Add a cup of the pasta water to the cheese mixture and stir
  12. Cook gently until the cheese is melted into a creamy sauce
  13. Flake the salmon and add to the sauce, add more pasta water if needed
  14. Add the pasta to the sauce
  15. Stir gently turning the heat back on to warm through
  16. Fold in rocket leaves and serve seasoned with salt and pepper to taste
