BBQ’d Fish Mediterranean Style
Proponents of Italian, Greek and Spanish food will be familiar with this way of barbecuing fish the Mediterranean way! Here is our recipe... Recipe by Michael Angelakis As seen on: Out of the Blue (Season 2021: Episode 7)
Ingredients
- 1 whole Australian Salmon or similar, gutted, scaled and cleaned
- Salt and pepper
- Oil
- 1 red onion sliced thickly
- 1 lemon thickly sliced
- 1 red chilli sliced
- Fresh parsley
- Cherry tomatoes halved
Instructions
- Remove guts from fish.
- Score each side of fish about 4 times and sprinkle with salt and pepper
- Lightly oil a piece of alfoil
- Lay slices of onion and lemon on foil
- Lay fish onto onion and lemon slices
- Stuff small pieces of chilli into score line
- Lightly drizzle the fish with oil
- Cover with parsley and halved tomatoes
- Wrap fish up in foil and bake over charcoal or BBQ until cooked (approx. 25mins)
Alternative:
Stuff fish with fresh parsley and green olives
