Bigoli Pasta with Prawns
I love prawns and boy do they work well with pasta. Especially fat pasta that's hollow in the middle so you can suck up all the sauce. This recipe if from Amanda's Easy Eats, Season 2023, Episode 04. As seen on: Amanda's Easy Eats (Season 2023: Episode 4)
Ingredients
- 1 pkt San Remo Bigoli pasta
- Olive oil
- 2 cloves garlic peeled and cracked
- 50gm flaked almonds toasted
- ¼ kg raw prawns (depends on how many you’re cooking for)
- Pepper
- Zest of a whole lemon
- 1 tbspn lemon juice
- 1 sprig of fresh mint finely chopped
- 2 tblspns parmigiano reggiano finely grated
- Chopped fresh red chilli to taste
Instructions
- Cook Bigoli pasta in saucepan of boiling salted water for 10mins.
- Heat shallow fry pan over medium heat and splosh a good quantity of oil.
- Add garlic and cook gently – do not allow to brown.
- Add prawns and fry gently until they go white both sides.
- Season with pepper.
- Scoop cooked pasta with a sieve straight from the saucepan into the prawns.
- If mixture is a little dry just add a couple of spoonsful of the pasta water.
- Add in lemon zest, juice, mint and cheese.
- Scoop out garlic cloves.
- Turn off heat. Stir big time.
- Add more pasta water if needed.
- Add flaked almonds, a little oil, chilli, a sprinkle of pepper and serve!
