Caramelised Onion Tart

Caramelised Onion Tart from Amanda's Easy Eats S2024

Ingredients

  • Large splash of oil
  • 4 large brown onion very thinly sliced (I used a mandolin)
  • 3 cloves garlic crushed
  • 2 tbs butter
  • Salt and pepper
  • 2 sprigs fresh thyme destalked
  • 1 sheet puff pastry thawed
  • 1 tin anchovies
  • Handful Kalamata olives pitted
  • 1 egg beaten

Instructions

  1. Heat oil in a large fry pan
  2. Over a medium heat throw in onions and garlic
  3. Add butter and swish around until onions are coated – about 5 mins
  4. Season with salt and pepper
  5. Add thyme and stir around
  6. Cover, reduce heat to low and cook for 45mins to an hour until caramelised
  7. Stir occasionally
  8. Remove from heat and cool completely
  9. Heat oven to 180C
  10. Line an oven tray with baking paper
  11. Lay sheet of pastry onto baking paper
  12. Use a knife to score a 2.5cm border around the edges – don’t pierce all the way through
  13. Prick holes in the centre section of the pastry
  14. Spoon onion mixture onto the pastry spreading out to the scored edge line
  15. Scatter anchovies and olives over the onion mixture
  16. Egg wash the edges
  17. Bake in the oven 15-20mins
  18. Serve cooled, sliced and garnished with thyme leaves
