Casarecce with Onion and Pancetta Sauce

Adam prepares a dish that celebrates Calabria using a special artisan pasta that has its origins in the region. With pancetta and pecorino, the traditional flavour make this an impressive dish for family and guests alike ... but Adam has made it so easy to get a great result. Recipe by Adam Swanson

Ingredients

  • 1 packet San Remo Casarecce
  • 1 tbsp. Olive Oil
  • 250gm diced Pancetta
  • 1 small Red Onion, chopped
  • 1 Red Chili
  • 1 litre Chicken Stock
  • 150gm Pecorino
  • 100gm Butter
  • ½ bunch Flat Leaf Parsley, chopped

Instructions

  1. Put pasta on to cook in a pot of boiling, salted water.
  2. Heat olive oil in a frying pan. Add pancetta, chili and onion to the pan and sauté for 5 minutes.
  3. Add chicken stock, butter, pepper and pecorino to the sauce and simmer until pasta is cooked.
  4. Spoon pasta from pot into the sauce. Serve with chopped parsley, pecorino, and pepper.
