Chicken Cacciatore Bianco
Chicken Cacciatore Bianco from Amanda's Easy Eats S2024. Amanda Duggan was inspired by a recipe published in Taste Magazine (27 July 2020). As seen on: Amanda's Easy Eats (Season 2024: Episode 6)
Ingredients
- Oil
- 8 chicken chops on the bone
- Salt and pepper
- White wine
- Lots of rosemary fronds – not stems
- 3 cloves garlic
- 12 anchovies
- ¼ cup white wine vinegar
- Large handful of black olives
Instructions
- Pour oil into a deep heavy base casserole dish – I used my Le Creuset
- Season chicken chops with salt and pepper
- Brown chicken on both sides in batches until golden. Set aside
- Deglaze the casserole dish with white wine and allow to cook off a little bit scraping the bottom and sides for the yummy bits
- Layer chicken chops back into dish
- If using cast iron pot put on lid and turn off heat
- In a food processor add in rosemary, garlic, anchovies, vinegar
- Blitz until smooth
- Pour sauce over chicken
- Add olives and stir
- Put back on heat, cover with lid and simmer for 50-60mins
- Serve with roasted Greek potatoes
