Chicken Cacciatore Bianco

Chicken Cacciatore Bianco from Amanda's Easy Eats S2024. Amanda Duggan was inspired by a recipe published in Taste Magazine (27 July 2020).

Ingredients

  • Oil
  • 8 chicken chops on the bone
  • Salt and pepper
  • White wine
  • Lots of rosemary fronds – not stems
  • 3 cloves garlic
  • 12 anchovies
  • ¼ cup white wine vinegar
  • Large handful of black olives

Instructions

  1. Pour oil into a deep heavy base casserole dish – I used my Le Creuset
  2. Season chicken chops with salt and pepper
  3. Brown chicken on both sides in batches until golden. Set aside
  4. Deglaze the casserole dish with white wine and allow to cook off a little bit scraping the bottom and sides for the yummy bits
  5. Layer chicken chops back into dish
  6. If using cast iron pot put on lid and turn off heat
  7. In a food processor add in rosemary, garlic, anchovies, vinegar
  8. Blitz until smooth
  9. Pour sauce over chicken
  10. Add olives and stir
  11. Put back on heat, cover with lid and simmer for 50-60mins
  12. Serve with roasted Greek potatoes
