Chicken Chorizo Paella
Chicken Chorizo Paella from Amanda's Easy Eats S2024. In this recipe, Amanda takes inspiration from the recipe on the side of the Beerenberg meal base jar. As seen on: Amanda's Easy Eats (Season 2024: Episode 7)
Ingredients
- 1 jar Beerenberg Chicken, Chorizo Paella meal base
- Oil
- 1 brown onion diced
- 2 chorizo sausages cut in half lengthways and then sliced into half moons
- 1 clove garlic minced
- 600gm chicken thighs diced
- Salt and pepper
- 1 cup Arroz rice
- 500ml chicken stock
- 1 red capsicum chopped
- Handful of flat leaf parsley chopped
Instructions
- Add oil to cold pan
- Add diced onion and sliced chorizo and heat gradually heat until you’ve got a sizzle happening
- Add garlic
- Stirring and cook until onion is golden
- Add chicken and allow to cook gently
- Season with salt and pepper
- Add uncooked rice and stir well
- Pour in jar of Beerenberg Chicken and Chorizo meal base
- Stir through
- Rinse out the jar with the stock
- Stir to combine
- Cover with lid and simmer 20 mins
- Halfway through add red capsicum
- Replace lid but leave a gap for steam to escape for remainder of cooking time
- Remove from heat and rest for 5 mins
- Serve garnished with chopped flat leaf parsley
