Focaccia
I have this amazing CIBO cookbook and Salvatore (who wrote it) shared this recipe for a simple-to-make Focaccia. Well, it sure is and we have it at home all the time as you only have to think about making it one or so hours ahead. Ingredients
- 500gm baker’s flour
- 20gm instant dried yeast
- 300ml water
- 20gm plain salt or green salt
- Olive oil
- Fresh rosemary sprigs chopped
- 1 clove garlic roughly chopped
Instructions
- Put flour in a large mixing bowl
- Add water to yeast and stir well
- Slowly add yeast and water mixture to flour
- Stir a little, add salt if you are using plain
- Mix slowly at first in food processor then speed up
- When thoroughly mixed remove
- Knead until it looks like an absolute ball of gorgeousness
- Place in a bowl, cover with tea towel and allow to rest for 30mins
- Drizzle oil onto a baking tray – don’t be shy
- Thoroughly coat the tray with the oil using a pastry brush
- Plonk the dough onto the tray and spread out right to edges
- Leave it covered for another half hour
- Heat oven to 210 degs
- Remove towel, make little dents all over the top
- Sprinkle with rosemary and garlic and green salt if you aren’t using plain
- Drizzle oil over the top
- Bake in a roaring oven for 20mins
- Cool on wire rack
- Cut into fingers and enjoy!
