Green Risoni Soup with Parmesan Rind

Green Risoni Soup with Parmesan Rind from Amanda's Easy Eats S2024. This recipe is Amanda Duggan's interpretation of a recipe inspired by the wonderful Ellie and Sam Studd from Delicious magazine.

Ingredients

  • Olive oil
  • 1 large zucchini or 2 small cut into rounds
  • 3 garlic cloves crushed
  • 1.5 litres of chicken stock
  • 1 parmesan rind
  • 1 cup risoni
  • 250g of shredded roasted chicken (I bought already cooked)
  • 2 bunches of broccolini chopped
  • 100 g baby spinach leaves
  • 1/3 cup of pesto

Instructions

  1. Heat oil in pan and add zucchini, fry until soft then remove and sit on paper towel
  2. Add garlic to the pot and fry until fragrant then add chicken stock and parmesan rind. Bring to boil and add risoni and shredded chicken.  Stir until risoni cooks (about 6-8 minutes)
  3. Add the Zucchini back to pot with broccolini and cook until just tender
  4. Remove from heat and stir through baby spinach leaves
  5. Serve into bowls and add teaspoon of pest and grated parmesan cheese
