Green Risoni Soup with Parmesan Rind
Green Risoni Soup with Parmesan Rind from Amanda's Easy Eats S2024. This recipe is Amanda Duggan's interpretation of a recipe inspired by the wonderful Ellie and Sam Studd from Delicious magazine. As seen on: Amanda's Easy Eats (Season 2024: Episode 22)
Ingredients
- Olive oil
- 1 large zucchini or 2 small cut into rounds
- 3 garlic cloves crushed
- 1.5 litres of chicken stock
- 1 parmesan rind
- 1 cup risoni
- 250g of shredded roasted chicken (I bought already cooked)
- 2 bunches of broccolini chopped
- 100 g baby spinach leaves
- 1/3 cup of pesto
Instructions
- Heat oil in pan and add zucchini, fry until soft then remove and sit on paper towel
- Add garlic to the pot and fry until fragrant then add chicken stock and parmesan rind. Bring to boil and add risoni and shredded chicken. Stir until risoni cooks (about 6-8 minutes)
- Add the Zucchini back to pot with broccolini and cook until just tender
- Remove from heat and stir through baby spinach leaves
- Serve into bowls and add teaspoon of pest and grated parmesan cheese
