Linguine with Italian Sausage, Truffle and Pepper

Inspired by his travels through Umbria, Adam's Linguine with Italian Sausage, Truffle and Pepper recipe is a quick and easy meal that can be adapted to different usage occasions. Leave out the truffle for an every day family meal. Add the truffle for an exotic and sophisticated course for a dinner party. Featured in Adam's Pasta Pilgrimage, season 1, episode 5. Ingredients

  • 1 packet San Remo Linguine
  • 1 tbsp. Olive Oil
  • 2 Italian Pork Sausages
  • 1 bunch Fresh Thyme
  • 1 carton Double Cream
  • 1 litre Chicken Stock
  • 2 Truffles, grated (can use preserved)
  • Pepper, to season
  • Grated Pecorino Cheese, to garnish

Instructions

  1. Cook pasta in boiling, salted water.
  2. Heat olive oil and butter in a frying pan.
  3. Remove the casing from the sausage, crumble meat, and add to the pan. Add the thyme and sauté and break down the sausage mince for 3-5 minutes.
  4. Add stock to the pan and reduce the heat by half. Add cream and taste to check the seasoning.
  5. Spoon pasta into the sauce.
  6. Serve with grated pecorino and grated truffle.
