Schnitzel, With A Twist! (Loaded Schnitties)
Loaded Schnitties from Amanda's Easy Eats S2024 As seen on: Amanda's Easy Eats (Season 2024: Episode 3)
Ingredients
- 4 chicken fillets pounded flat and even
- 4 slides prosciutto
- 4 slices mozzarella
- 4 sage leaves
- 4 cups panko breadcrumbs
- Handful fresh parsley chopped
- 2 cups grated parmesan
- Zest of one lemon
- 1 cup plain flour
- Pepper to taste
- 4 eggs beaten
- Paprika
- Oil
- Butter
Instructions
- Heat oven to 150 degs
- Lay chicken fillets out flat
- Layer slices of prosciutto, provolone and sage leaves on each fillet
- Fold fillets in half and set aside
- Mix breadcrumbs, parsley, cheese and lemon rind in a bowl
- Mix flour and pepper in a bowl
- Mix eggs and paprika in a bowl
- Dip the chicken fillets into the flour coating both sides and knocking off excess
- The dip into egg mixture to coat followed by the breadcrumb mix making sure completely coated
- In a large fry pan heat oil and a knob of butter under gentle heat
- Cook fillets tow at a time each side until golden brown
- Lay onto a baking tray and pop in the oven for a short while to keep warm and finish off
- Refresh oil and butter in pan and continue cooking schnitties two at a time, popping them in the oven whilst remainder are cooked
- Leave in oven for approx 10 mins to finish off nicely
- Serve with lemon wedges and greens
