Lobster Linguine

After demonstrating how to prepare and halve a lobster earlier in the episode, Michael Angelakis shares his Lobster Linguine recipe, using all the meat from half a lobster. Recipe by Michael Angelakis

Ingredients

  • 1 pkt linguine
  • Half cooked lobster meat roughly chopped
  • Butter
  • Oil
  • 1 clove garlic finely sliced
  • 1 red chilli finely sliced (to taste)
  • 1/2 cup white wine
  • Pepper
  • Handful of fresh dill chopped
  • 1 tspn lobster oil

Instructions

  1. Bring large pan of salted water to boil
  2. Add pasta to saucepan and cook to al dente
  3. Meanwhile preparing the sauce
  4. Melt butter in a large fry pan
  5. Add a splash of oil
  6. Add garlic and chilli
  7. When garlic softens add lobster meat
  8. Stir thoroughly
  9. Add white wine
  10. Add cooked pasta to sauce and stir through
  11. Season with cracked pepper
  12. Add a little more butter to give a nice glaze and help thicken the sauce
  13. Garnish with dill and the lobster oil and serve
