One Pot Risoni
A great weeknight recipe that only requires one pot and has loads of flavour. From Amanda's Easy Eats, Season 2023, Episode 05. Recipe by Amanda Duggan As seen on: Amanda's Easy Eats (Season 2023: Episode 5)
Ingredients
- Olive oil
- 3 zucchini chopped
- Salt
- 2 cloves garlic finely chopped
- 1 onion chopped
- 2 tins cherry tomatoes
- Squirt of tomato paste
- ½ pkt risoni
- ½ cup white wine
- Water
- ½ tin of butter beans
- 2 tblspns Kalamata olives pitted
- Dried chilli flakes
- Handful fresh parsley chopped
Instructions
- Add a good splosh of oil to a large pan over a medium heat.
- Plonk in zucchini.
- Sprinkle with salt to taste.
- Stir until zucchini takes on a little bit of colour.
- Remove from pan and set aside.
- Turn up heat and add garlic and onion.
- Add cherry tomatoes to pan and stir.
- Squirt in tomato paste.
- Sprinkle in risoni and stir big time.
- Add white wine and cover.
- Add water as the risoni cooks (won’t take long), don’t let it stick to the bottom of the pan.
- Lower heat right down.
- Add butter beans and olives.
- Pour back in cooked zucchini and stir.
- Garnish with chilli flakes and fresh parsley and serve.
