One Pot Risoni

A great weeknight recipe that only requires one pot and has loads of flavour. From Amanda's Easy Eats, Season 2023, Episode 05. Recipe by Amanda Duggan

Ingredients

  • Olive oil
  • 3 zucchini chopped
  • Salt
  • 2 cloves garlic finely chopped
  • 1 onion chopped
  • 2 tins cherry tomatoes
  • Squirt of tomato paste
  • ½ pkt risoni
  • ½ cup white wine
  • Water
  • ½ tin of butter beans
  • 2 tblspns Kalamata olives pitted
  • Dried chilli flakes
  • Handful fresh parsley chopped

Instructions

  1. Add a good splosh of oil to a large pan over a medium heat.
  2. Plonk in zucchini.
  3. Sprinkle with salt to taste.
  4. Stir until zucchini takes on a little bit of colour.
  5. Remove from pan and set aside.
  6. Turn up heat and add garlic and onion.
  7. Add cherry tomatoes to pan and stir.
  8. Squirt in tomato paste.
  9. Sprinkle in risoni and stir big time.
  10. Add white wine and cover.
  11. Add water as the risoni cooks (won’t take long), don’t let it stick to the bottom of the pan.
  12. Lower heat right down.
  13. Add butter beans and olives.
  14. Pour back in cooked zucchini and stir.
  15. Garnish with chilli flakes and fresh parsley and serve.
