If you happen to be a little unlucky and have a headcold or feeling a little down, then this soup is for YOU! From Amanda's Easy Eats, Season 2023. Recipe by Alex Duggan

Ingredients

  • 1 x pkt San Remo Small Pasta Shells (depending on how many you are cooking for)
  • 1 white onion chopped
  • 1 clove garlic crushed
  • 2 carrots chopped
  • 2 ½ tblspns stock powder
  • 150gm frozen peas
  • Salt and pepper
  • 5 cups water
  • 1 egg

(you can add additional veggies if you fancy it)

Instructions

  1. Fry the onion and garlic in a little oil
  2. Season with salt and pepper
  3. Add the chopped carrots
  4. Pour in water
  5. Add 21/2 tbspn stock powder – I used G Fresh’s stock powder but any will do
  6. Stir
  7. Bring to boil
  8. Add pasta and simmer for 8 mins
  9. Lower heat and add peas
  10. Turn off heat
  11. Crack egg directly into the mixture and swirl through – the residual heat will cook the egg
  12. Serve and enjoy
