Pesto, Chicken, Sundried tomato with Wagon Wheel Pasta
Pesto Pasta with Chicken from Amanda's Easy Eats S2024. Amanda Duggan drew inspiration from a recipe on the allrecipes.com web site but added some of her own ideas ... particularly her tips for making pesto that she learnt in Liguria. As seen on: Amanda's Easy Eats (Season 2024: Episode 14)
Ingredients
- 1 pkt wagon wheel pasta
- 1 tbs oil
- Little bit of butter
- Salt and pepper
- 2 boneless, skinless chicken breasts, cut into bite sized pieces
- 1/3 cup oil packed sun-dried tomatoes, drained and cut into strips
- ½ cup pesto sauce - buy a jar of ready-made or make yourself
- Parmigiano-Reggiano grated
Instructions
- Bring a large saucepan of salted water to boil
- Add pasta and cook according to packet instructions (about 10 mins)
- Season chicken with salt and pepper
- Heat oil in large fry pan over medium heat
- Add butter – allow to melt but not burn
- Stir in chicken and fry until golden brown
- Add sun dried tomatoes and stir
- Remove pasta from water couple of minutes before its cooked – add to chicken and stir allowing the pasta to absorb the chicken juices
- Thoroughly mix in pesto adding a little pasta water if required
- Garnish with Parmigiano-Reggiano and fresh basil leaves and serve
