Pesto, Chicken, Sundried tomato with Wagon Wheel Pasta

Pesto Pasta with Chicken from Amanda's Easy Eats S2024. Amanda Duggan drew inspiration from a recipe on the allrecipes.com web site but added some of her own ideas ... particularly her tips for making pesto that she learnt in Liguria.

Ingredients

  • 1 pkt wagon wheel pasta
  • 1 tbs oil
  • Little bit of butter
  • Salt and pepper
  • 2 boneless, skinless chicken breasts, cut into bite sized pieces
  • 1/3 cup oil packed sun-dried tomatoes, drained and cut into strips
  • ½ cup pesto sauce - buy a jar of ready-made or make yourself
  • Parmigiano-Reggiano grated 

Instructions

  1. Bring a large saucepan of salted water to boil
  2. Add pasta and cook according to packet instructions (about 10 mins)
  3. Season chicken with salt and pepper
  4. Heat oil in large fry pan over medium heat
  5. Add butter – allow to melt but not burn
  6. Stir in chicken and fry until golden brown
  7. Add sun dried tomatoes and stir
  8. Remove pasta from water couple of minutes before its cooked – add to chicken and stir allowing the pasta to absorb the chicken juices
  9. Thoroughly mix in pesto adding a little pasta water if required
  10. Garnish with Parmigiano-Reggiano and fresh basil leaves and serve
