Prawn, Chickpea and ‘nduja Pasta Salad

Prawn, Chickpea and ‘nduja Pasta Salad from Amanda's Easy Eats S2024

Ingredients

  • 250gm macaroni pasta
  • ¼ cup extra virgin olive oil
  • 300gm green prawns peeled and chopped
  • Salt and pepper
  • ¼ cup ‘nduja (spreadable spicy salami)
  • 2 tsp runny honey
  • 2 tsp sherry vinegar
  • 400gm canned chickpeas, rinsed and drained
  • Dill fronds chopped
  • 1 baby fennel, cut into thin matchsticks
  • Baby spinach leaves

Instructions

  1. Bring a saucepan of water to boiling and cook pasta for 8 mins
  2. Meanwhile, heat 1 tbs oil in frypan over high heat
  3. Add prawns and cook, stirring occasionally for 2-3 mins or until cooked through. Season with salt. Set aside
  4. Heat remaining 2 tbs oil in frypan over high heat
  5. Add ‘nduja to pan, break up with a wooden spoon and cook for 2 min
  6. Transfer to a large bowl with honey and vinegar and stir to combine
  7. Drain, toss and run pasta under cold water and add to bowl of ‘nduja mixture
  8. Add chick peas and mix through.
  9. Transfer to a large serving plate, top with prawns, fennel, spinach leaves and dill to serve. Delish!
