Prawn, Chickpea and ‘nduja Pasta Salad
Prawn, Chickpea and ‘nduja Pasta Salad from Amanda's Easy Eats S2024
Ingredients
- 250gm macaroni pasta
- ¼ cup extra virgin olive oil
- 300gm green prawns peeled and chopped
- Salt and pepper
- ¼ cup ‘nduja (spreadable spicy salami)
- 2 tsp runny honey
- 2 tsp sherry vinegar
- 400gm canned chickpeas, rinsed and drained
- Dill fronds chopped
- 1 baby fennel, cut into thin matchsticks
- Baby spinach leaves
Instructions
- Bring a saucepan of water to boiling and cook pasta for 8 mins
- Meanwhile, heat 1 tbs oil in frypan over high heat
- Add prawns and cook, stirring occasionally for 2-3 mins or until cooked through. Season with salt. Set aside
- Heat remaining 2 tbs oil in frypan over high heat
- Add ‘nduja to pan, break up with a wooden spoon and cook for 2 min
- Transfer to a large bowl with honey and vinegar and stir to combine
- Drain, toss and run pasta under cold water and add to bowl of ‘nduja mixture
- Add chick peas and mix through.
- Transfer to a large serving plate, top with prawns, fennel, spinach leaves and dill to serve. Delish!
