Redfish Asian Style

Ingredients
- 4 fillets of red nannygai (skin on)
- Ginger
- Chillies
- Shallots
- Fish sauce
- Lime juice
- Peanut oil
- Salt and pepper
- 2 green pawpaws
- 1 Spanish onion
- 6 chopped cherry tomatoes
- Olive oil Balducci
- Crushed horseradish cream
Instructions
- Prepare a salad of sliced green pawpaw, chopped tomatoes, olive oil, horseradish cream and chopped Spanish onions.
- Heat oil in a frying pan and add red nannygai fillets (skin down) and cook for 1min, then set aside.
- Add chopped ginger to pan, then the shallots, chillies, fish sauce and lime juice. Cook for 30secs, stirring slowly.
- Add the fish fillets and cook on high for 2mins.
- Serve with pawpaw salad.
