Redfish Asian Style

Ingredients

  • 4 fillets of red nannygai (skin on)
  • Ginger
  • Chillies
  • Shallots
  • Fish sauce
  • Lime juice
  • Peanut oil
  • Salt and pepper
  • 2 green pawpaws
  • 1 Spanish onion
  • 6 chopped cherry tomatoes
  • Olive oil Balducci
  • Crushed horseradish cream

Instructions

  1. Prepare a salad of sliced green pawpaw, chopped tomatoes, olive oil, horseradish cream and chopped Spanish onions.
  2. Heat oil in a frying pan and add red nannygai fillets (skin down) and cook for 1min, then set aside.
  3. Add chopped ginger to pan, then the shallots, chillies, fish sauce and lime juice. Cook for 30secs, stirring slowly.
  4. Add the fish fillets and cook on high for 2mins.
  5. Serve with pawpaw salad.
