Rigatoni with Broccoli Sauce

Ingredients

  • 1 head of broccoli, washed, dried and cut into bite size pieces
  • Salt
  • 1 pkt rigatoni
  • ¼ cup extra virgin olive oil
  • 4 cloves garlic chopped
  • ¼ tspn chilli flakes (to taste)
  • Pepper
  • ½ - 1 cup Parmigiano Reggiano grated

Instructions

  1. Cook broccoli in boiling water for 2 mins – don’t let it go mushy
  2. Scoop from pan into a bowl
  3. Retain saucepan of boiling water and add rigatoni – cook for 10 mins
  4. To make sauce heat fry pan and add oil (a good dose)
  5. Add garlic before oil gets hot so they heat up together
  6. Add chilli flakes and allow to cook stirring all the time
  7. Add cooked broccoli to fry pan and stir to coat and soak up oil
  8. Allow to keep cooking while the pasta cooks
  9. Season with salt and pepper
  10. Broccoli will break down as it cooks
  11. Add a ladle of pasta water to broccoli to prevent drying out
  12. Scoop cooked pasta from saucepan straight into the pan of broccoli
  13. Stir through, adding a bit more of the pasta water if needed
  14. Add parmigiano reggiano (to taste) and stir through
  15. Garnish with ground pepper and serve
