Rigatoni with Broccoli Sauce
Rigatoni with Broccoli sauce from Amanda's Easy Eats Season 2024. Amanda Duggan prepared this recipe after being inspired by Snejana the Modern Nonna on TikTok (@themodernnonna). As seen on: Amanda's Easy Eats (Season 2024: Episode 11)
Ingredients
- 1 head of broccoli, washed, dried and cut into bite size pieces
- Salt
- 1 pkt rigatoni
- ¼ cup extra virgin olive oil
- 4 cloves garlic chopped
- ¼ tspn chilli flakes (to taste)
- Pepper
- ½ - 1 cup Parmigiano Reggiano grated
Instructions
- Cook broccoli in boiling water for 2 mins – don’t let it go mushy
- Scoop from pan into a bowl
- Retain saucepan of boiling water and add rigatoni – cook for 10 mins
- To make sauce heat fry pan and add oil (a good dose)
- Add garlic before oil gets hot so they heat up together
- Add chilli flakes and allow to cook stirring all the time
- Add cooked broccoli to fry pan and stir to coat and soak up oil
- Allow to keep cooking while the pasta cooks
- Season with salt and pepper
- Broccoli will break down as it cooks
- Add a ladle of pasta water to broccoli to prevent drying out
- Scoop cooked pasta from saucepan straight into the pan of broccoli
- Stir through, adding a bit more of the pasta water if needed
- Add parmigiano reggiano (to taste) and stir through
- Garnish with ground pepper and serve
