Roasted mushrooms with tahini sauce
Roasted mushrooms with tahini sauce from Amanda's Easy Eats S2024 As seen on: Amanda's Easy Eats (Season 2024: Episode 10)
Ingredients
- 4 large flat mushrooms
- 2 tbs extra virgin olive oil
Tahini Sauce
- ½ cup (90g) tahini
- 2 tsp lemon juice
- Fine salt
Pistachio Gremolata
- 25gm pistachios, finely chopped
- 1½ flat leafed parsley finely chopped
- 1½ mint leaves finely chopped
- 2 tbspn extra virgin olive oil
- 2 tspns lemon juice
- 1 small clove garlic, crushed
- ½ lemon zested finely
- Salt flakes
Instructions
Tahini Sauce
- Place tahini and lemon juice in a food processor with 1/3 cup (80ml) cold water and ¾ tsp fine salt.
- Whiz for 20 secs or until smooth.
*note the sauce will be runny at first but thickens over time. If serving immediately add a little less water when preparing
Pistachio Gremolata
- Place all ingredients in a medium bowl.
- Season with salt flakes and freshly ground black pepper and mix thoroughly
- Set aside
- Preheat oven to 220/200C degs fan-forced
- Line a baking tray with baking paper
- Brush mushrooms with oil and season generously with salt flakes and freshly ground black pepper
- Arrange on prepared tray, cup-side up
- Roast for 15mins or untold golden
- Cut each mushroom in half
- To serve, dollop a serving plate with tahini sauce
- Arrange mushroom over the sauce and spoon over gremolata
