Salmon with Creamy Lemon Sauce and Pappardelle

Ingredients
- 1 pkt egg noodles
- Knob of butter
- Zest of one lemon
- 2/3 cup white wine
- 1 cup cream
- Salt and pepper
- Handful fresh parsley chopped
- 200gm salmon skin removed sliced into thin strips
- Splash of lemon juice
Instructions
- Bring a saucepan of salted water to the boil
- Cook the pasta 8-10mins
- Meanwhile melt a knob of butter in a fry pan
- Add zest and white wine
- Cook to reduce the alcohol
- Add cream and whisk through
- Place lid on fry pan and bring mixture to the boil
- Season with salt and pepper to taste
- Add parsley
- Add cook pasta straight from the water to the fry pan and stir through
- Turn off heat
- Add salmon and stir – the residual heat will cook the salmon
- Add splash lemon juice and serve
