Salmon with Creamy Lemon Sauce and Pappardelle

Ingredients

  • 1 pkt egg noodles
  • Knob of butter
  • Zest of one lemon
  • 2/3 cup white wine
  • 1 cup cream
  • Salt and pepper
  • Handful fresh parsley chopped
  • 200gm salmon skin removed sliced into thin strips
  • Splash of lemon juice

Instructions

  1. Bring a saucepan of salted water to the boil
  2. Cook the pasta 8-10mins
  3. Meanwhile melt a knob of butter in a fry pan
  4. Add zest and white wine
  5. Cook to reduce the alcohol
  6. Add cream and whisk through
  7. Place lid on fry pan and bring mixture to the boil
  8. Season with salt and pepper to taste
  9. Add parsley
  10. Add cook pasta straight from the water to the fry pan and stir through
  11. Turn off heat
  12. Add salmon and stir – the residual heat will cook the salmon
  13. Add splash lemon juice and serve
