Summer Salad with Salmon

A salmon salad with all the things! Crunchy lettuce leaves, sweet corn, crunchy pine nuts, charred broccolini AND egg! You can remove the salmon for a vegetarian version.

Ingredients

Salad

  • Sweet corn shaved off a cob
  • 1 salmon fillet* cooked and flaked
  • 1 bunch broccolini chargrilled and sliced
  • 1 lettuce of your choice chopped – I use Cos
  • 2 large tomatoes chopped
  • 1 cucumber chopped
  • 2 spring onions chopped
  • 1 cup edamame beans
  • 1 avocado chopped
  • 1 carrot grated
  • 1 egg hard boiled
  • Salt and pepper

* Remove the salmon for a vegetarian version.

Extras

  • 1 tblspn sunflower seed
  • 1 tblspn pepitas or pumpkin seeds
  • 1 tblspn pine nuts

Dressing

  • 2 tblspns oil
  • 3 cloves garlic crushed or minced
  • 1 lemon juiced

Instructions

Salad

  1. Combine salad ingredients apart from the egg in a bowl.
  2. Pour over dressing and stir through.
  3. Carefully slice egg and arrange on the side.
  4. Season with salt and pepper.
  5. Garnish with toasted seeds and serve.

Extras

  • Pour sunflower seeds, pepitas and pine nuts into a small fry pan and toast gently over low heat.

Dressing

  • Combine ingredients.
