Thai Style Chicken & Pork Meatballs

Thai Style Chicken & Pork Meatballs from Amanda's Easy Eats

Ingredients

  • 500gm mince (250gms each of pork & chicken)
  • 1 cup fresh breadcrumbs
  • 2 tbs Thai green curry paste
  • 1 clove garlic minced
  • 1 tsp grated ginger

Dipping Sauce

  • 2 little bum burner chillies chopped finely – with or without seeds (up to you)
  • ¼ cup caster sugar
  • ¼ cup rice wine vinegar
  • 1 tbs fish sauce
  • ½ tsp salt
  • 2 tbs water
  • Lettuce & coriander leaves to serve

Instructions

  1. Soak 8 wooden skewers for 30mins
  2. Place pork, breadcrumbs, garlic, curry paste, ginger and fish sauce in a bowl
  3. Mix well. Cover and chill for at least 1 hr to allow flavours to infuse
  4. Meanwhile, remove seeds from chillies and chop finely
  5. Place in a sauce with sugar, rice wine vinegar, salt and water.  Stir over low heat until sugar dissolves. Cool
  6. Shape mince into approx. 24 balls and thread three onto each skewer
  7. Heat a lightly oiled chargrill or frypan in med heat
  8. Cook for 6-8 minutes, turning until cooked through
  9. Wrap in lettuce cups and garnish with coriander
  10. Serve with chilli dipping sauce
