Tubular Spaghetti with Pig Cheek and Pecorino

This simple recipe, inspired by the traditional recipes of Lazio, is quick and easy to make. Featured in Adam's Pasta Pilgrimage season 1 episode 6. Recipe by Adam Swanson

Ingredients

  • 1 packet San Remo Tubular Spaghetti
  • 1 tbsp. Olive Oil
  • 250gm Pig Cheek
  • 1 jar Tomato Passata
  • Grated Pecorino Cheese, to garnish
  • Salt
  • Pepper

Instructions

  1. Cook pasta in boiling, salted water.
  2. Heat olive oil in a pan. Dice pig cheek and cook in pan for five minutes on low heat, to render the fat.
  3. Add passata and bring to a simmer.
  4. When cooked, add pasta to the sauce.
  5. Serve with grated pecorino.
