Zuppe di Cozze
This recipe for Zuppe di Cozze from Amanda's Easy Eats S2024, was inspired by an original recipe by Deborah Mele on her web site "Italian Food Forever" (italianfoodforever.com). As seen on: Amanda's Easy Eats (Season 2024: Episode 19)
Ingredients
- Oil
- 1 onion chopped
- 2 stalks celery chopped
- 2 cloves garlic minced
- Salt and pepper
- ½ cup dry white wine
- 1 cup water
- 1 tin chopped tomatoes
- 1½ kg mussels rinsed, scrubbed with beards removed
- ¼ cup chopped fresh parsley
Instructions
Heat the oil in a large pan
Sauté onion and celery
Add garlic to onions and keep cooking
Add salt and pepper
Cover and cook until onions are translucent
Add tomatoes and cook 5-10 mins or until sauce begins to thicken
Add wine and cook another 10 mins, adding water as needed – make sure it is more saucy than soupy
Add drained mussels, cover and cook until the shells open (approx. 5 mins)
Sprinkle over chopped parsley and serve with grilled garlic bread
