Buckwheat Spirals with Gorgonzola, Taleggio and Walnuts

This recipe brings together the two great cheeses of Lombardia - Taleggio and Gorgonzola. It also uses the famous pasta that claims its origins from the region, Buckwheat pasta. This recipe was featured in Adam's Pasta Pilgrimage, season 1, episode 13. Recipe by Adam Swanson

Ingredients

  • 1 packet San Remo Buckwheat Spirals
  • Half clove garlic
  • 100gm Taleggio cheese
  • 100gm Gorgonzola Dolce cheese
  • 150gm walnuts
  • Bunch English spinach
  • 50gm butter

Instructions

  1. Cook pasta in boiling, salted water
  2. Wash spinach and remove leaf from stems
  3. Blanch spinach in boiling water
  4. Remove spinach from water and put in food processor with butter and garlic and blitz to a fine paste
  5. Heat pan and add spinach mixture and butter
  6. Add cooked pasta and toss
  7. Toss through crumbled Taleggio and Gorgonzola cheeses
  8. Serve garnished with walnuts
