Chargrilled Fennel, Asparagus and Couscous Salad

Ingredients
Dressing
- 1 cup oil
- 1 bunch fresh coriander
- 1 green chilli
- 1 clove garlic
- 1 tspn honey
Salad
- 1 pkt (300gms) pearl couscous
- 3 cups boiling water
- 1 fennel bulb chopped
- 1 bunch asparagus cut into 5cm pieces
- 1 red onion sliced
- Oil
- Salt and pepper
- ½ lemon juiced
- 2 tbsps each of sunflower, pine nuts and pepitas lightly toasted
Instructions
Dressing
- Place all ingredients into a blender and mix
Salad
- Pour couscous into a saucepan and toast lightly over gentle heat
- Turn off heat and pour over water, cover and put aside
- Heat grill over med heat on stove top
- Toss fennel and asparagus in oil
- Grill fennel and asparagus
- Sprinkle over salt
- Remove and set aside
- Repeat process with onion
- Chop up fennel, asparagus, and onion to bite sized chunks and place in a salad bowl
- Add a drizzle of oil, pinch salt, pepper and lemon juice to couscous and stir
- Add couscous to fennel, asparagus and onion and stir through
- Pour over dressing and mix through
- Garnish with sunflower, pine nuts, pepitas and chopped coriander
