Dolmades

Ingredients

Tzatziki

  • 750 gms of Greek yoghurt
  • 4 cloves garlic crushed
  • 2 Lebanese cucumbers, deseeded and grated
  • 1 tbsp olive oil
  • Salt & pepper

Dolmades

  • Vine leaves washed (you can buy these in a jar)
  • Southern Blue Fin tuna slices cut into small squares

Instructions

Tzatziki

  1. Strain yoghurt overnight through a piece of gauze or chux wipe
  2. Combine all ingredients gently

Dolmades

  1. Spread each vine leaf with tzatziki
  2. Lay a piece of tuna over the top
  3. Roll the vine leaf up into a small parcel
  4. Continue until all vine leaves are used
