Gluten Free Battered Snook

This is a fish batter recipe for people who are gluten intolerant. Recipe by Michael Keelan and Michael Angelakis

Ingredients

  • 1 bottle cold sparkling mineral water
  • 2 cups of gluten free flour (tapioca, rice or cornflour)
  • Salt and pepper
  • Fish fillets
  • Oil

Instructions

  1. Pour enough mineral water into flour to make a silky paste
  2. Season fish fillets with salt and pepper
  3. Dip fillets into the batter and drape off excess
  4. Pour oil into a pan
  5. Drop fish fillets into oil and lightly fry
  6. Cook for approximately 2 minutes
