Gluten Free Battered Snook
This is a fish batter recipe for people who are gluten intolerant. Recipe by Michael Keelan and Michael Angelakis As seen on: Out of the Blue (Season 2021: Episode 8)
Ingredients
- 1 bottle cold sparkling mineral water
- 2 cups of gluten free flour (tapioca, rice or cornflour)
- Salt and pepper
- Fish fillets
- Oil
Instructions
- Pour enough mineral water into flour to make a silky paste
- Season fish fillets with salt and pepper
- Dip fillets into the batter and drape off excess
- Pour oil into a pan
- Drop fish fillets into oil and lightly fry
- Cook for approximately 2 minutes
