Grilled Zucchini with Baked Ricotta and Crusty Bread
Grilled Zucchini with Baked Ricotta and Crusty Bread from Amanda's Easy Eats S2024 As seen on: Amanda's Easy Eats (Season 2024: Episode 18)
Ingredients
- 1 loaf Ciabatta sliced and toasted
- 3 large zucchini sliced longways and sprinkled with salt
- 150gms or small tub ricotta (the solid kind)
- 1 tsp ras el hanout*
- 1/2 tsp chilli powder
- 1 clove garlic minced
- Smidge of honey
- 1 tsp oil
*ras el hanout can be found in the supermarket spice section
Instructions
- Pat zucchini slices dry and grill gently – takes about 4 mins each side
- Place on oven tray lined with baking paper
- Combine ras el hanout, chilli powder, garlic, honey and oil
- Place ricotta in a small oven proof bowl and spread ras el hanout mixture over the top
- Pop ricotta onto the baking tray with zucchini slices
- Stick it in the oven for 10mins @ 200 degs
- Cut zucchini slices in half (so they fit on the bits of bread)
- Remove from oven and arrange ciabatta, zucchini and ricotta on a serving platter to serve garnished with mint leaves and lemon wedges
