Spaghetti Napolitana

This recipe from season 1 episode 1 from Adam's Pasta Pilgrimage celebrates the traditional tomato pasta recipe synonymous with the city of Naples. Recipe by Adam Swanson.

Ingredients

  • 1 packet San Remo Spaghetti
  • 1 tbsp Olive Oil
  • 2 cloves Garlic, crushed
  • 2 tins canned, Diced Tomatoes
  • ½ bunch fresh Basil
  • 150gm Buffalo Mozzarella
  • Salt
  • Pepper
  • Parmesan, to garnish

Instructions

  1. Cook pasta in boiling, salted water.
  2. Heat oil in a frying pan. Add two crushed, peeled cloves of garlic and fry until fragrant. Add the tins of tomato and bring to the boil. Reduce to a simmer and cook for five to ten minutes.
  3. Remove the cloves of garlic from the sauce, and add the torn up pieces of basil.
  4. When cooked, scoop pasta from the water and add to the sauce.
  5. Tear buffalo mozzarella and add to the pan.
  6. Turn the heat off and use the tongs to let the cheese melt into the pasta and sauce.
  7. Serve with grated parmesanĀ
