Spaghetti Napolitana
This recipe from season 1 episode 1 from Adam's Pasta Pilgrimage celebrates the traditional tomato pasta recipe synonymous with the city of Naples. Recipe by Adam Swanson. As seen on: Adam's Pasta Pilgrimage (Season 1: Episode 1)
Ingredients
- 1 packet San Remo Spaghetti
- 1 tbsp Olive Oil
- 2 cloves Garlic, crushed
- 2 tins canned, Diced Tomatoes
- ½ bunch fresh Basil
- 150gm Buffalo Mozzarella
- Salt
- Pepper
- Parmesan, to garnish
Instructions
- Cook pasta in boiling, salted water.
- Heat oil in a frying pan. Add two crushed, peeled cloves of garlic and fry until fragrant. Add the tins of tomato and bring to the boil. Reduce to a simmer and cook for five to ten minutes.
- Remove the cloves of garlic from the sauce, and add the torn up pieces of basil.
- When cooked, scoop pasta from the water and add to the sauce.
- Tear buffalo mozzarella and add to the pan.
- Turn the heat off and use the tongs to let the cheese melt into the pasta and sauce.
- Serve with grated parmesanĀ
