Whatever you have in the fridge salad
This is like a surprise chef moment where I open my fridge and pull out whatever is in there and make a salad. It turned out to be bloomin' yummy. Recipe from Amanda's Easy Eats - Season 2023 Recipe by Amanda Duggan As seen on: Amanda's Easy Eats (Season 2023: Episode 1)
Ingredients
I had in my fridge:
- Leftover cooked chicken schnitzel sliced
- 2 eggs hard boiled (for 8 minutes) and sliced
- Lettuce chopped
- Cherry tomatoes halved
- Cucumber chopped
- 2 mushrooms peeled and chopped
- 1 carrot grated
- Zucchini chopped
- Fetta cheese chopped
- 2 spring onions chopped
- Rocket flowers snipped into sprigs
- Few springs fresh parsley
- Couple of zucchini flowers sliced
- 1 fennel flower snipped into sprigs
- Few leaves of fresh basil
- Handful shelled pistachios
- Handful pepitas
Dressing
- Splosh olive oil
- 1 clove garlic crushed
- 1 lemon juiced
- Salt and pepper
Instructions
Method
- Hard boil eggs
- Place lettuce, tomatoes, cucumber, zucchini, mushrooms, carrot, spring onions, in salad bowl and toss
- Pour over dressing
- Dish out salad onto plates
- Decorate with zucchini, rocket and fennel flowers
- Add basil and parsley leaves
- Lay schnitzel across the top of each salad
- Pop fetta around edges
- Top with pistachios and pepitas
- Garnish with eggs around the side
- Season with salt and pepper
- Drizzle over a tiny bit more dressing to top it all off
Dressing
- Combine ingredients and shake
