Whatever you have in the fridge salad

This is like a surprise chef moment where I open my fridge and pull out whatever is in there and make a salad. It turned out to be bloomin' yummy. Recipe from Amanda's Easy Eats - Season 2023 Recipe by Amanda Duggan

Ingredients

I had in my fridge:

  • Leftover cooked chicken schnitzel sliced
  • 2 eggs hard boiled (for 8 minutes) and sliced
  • Lettuce chopped
  • Cherry tomatoes halved
  • Cucumber chopped
  • 2 mushrooms peeled and chopped
  • 1 carrot grated
  • Zucchini chopped
  • Fetta cheese chopped
  • 2 spring onions chopped
  • Rocket flowers snipped into sprigs
  • Few springs fresh parsley
  • Couple of zucchini flowers sliced
  • 1 fennel flower snipped into sprigs
  • Few leaves of fresh basil
  • Handful shelled pistachios
  • Handful pepitas

 

Dressing

  • Splosh olive oil
  • 1 clove garlic crushed
  • 1 lemon juiced
  • Salt and pepper

Instructions

Method

  1. Hard boil eggs
  2. Place lettuce, tomatoes, cucumber, zucchini, mushrooms, carrot, spring onions, in salad bowl and toss
  3. Pour over dressing
  4. Dish out salad onto plates
  5. Decorate with zucchini, rocket and fennel flowers
  6. Add basil and parsley leaves
  7. Lay schnitzel across the top of each salad
  8. Pop fetta around edges
  9. Top with pistachios and pepitas
  10. Garnish with eggs around the side
  11. Season with salt and pepper
  12. Drizzle over a tiny bit more dressing to top it all off

Dressing

  • Combine ingredients and shake
